ICE CREAM!! :-)

Vanilla ice-cream!

Can you believe it?!! :-) That on this low-carb diet, you can actually eat ice cream, as part of the diet is high fat, and ice cream is made of cream - high in fat and protein - and eggs, and sweetener with no calories. Plus the flavor of your choice. Vanilla is a good choice, and vanilla contains no calories either.

Ingredients:

0,5 liters cream (2 cups)
4-5 eggs
Sweetener (like Stevia, erythritol/Sukrin), about 1 cup
Flavor (vanilla, for instance, 1-2 teaspoons of vanillapowder)


Split the eggs, and whisk the egg-whites until stiff (or, just foamy works too). Whisk the cream with the sweetener, until it becomes stiff (whipped cream), and then add the egg yolks and the (vanilla) flavor. Then add the eggwhites. If you're making it to eat later in the evening, you can put it in 2 bowls (if you're 2 persons eating) and it's paobably done about 3 hours later. If you wait too long, it will be too hard to eat, so check it every half hour or so. Or, if you're making it for later and to keep in the freezer, I would recommend to put it in 4 smaller bowls, as you don't really need more than that per portion, it's pretty sweet. And in a smaller bowl it wouldn't take as long to soften. Take it out a little while before you're going to eat it, though, as it is harder than normal ice cream. If you want it for dessert after dinner, take it out when you cook dinner and let it sit and soften a little.


Here are some other ice cream recipes with ideas for different flavors (as allowed on low carb diet; you can use berries, or nuts, coffee, vanilla, dark chocolate 70% cocoa, ginger, green tea.. or mint!) Pancakes (with almond flour)



Ingredients:
(makes about 3 pancakes)

Almond flour, one cup
2 eggs
Water or sparkling water, 1/2 cup
Olive oil, 2 tablespoons
Salt, 1 teaspoon
Sweetener (Splenda, 2-3 tablespoons)

Mix all ingredients (add water a little at a time to see how much you need).
Heat some butter in a frying pan and make the pancakes.

Eat as they are, or with blueberries (mixed with sweetener to make your own sweet blueberry-jam), or put whatever you like on them; tomatoes, ham, cheese...

Vegetable drink (or purée if thicker)



Boil some broccoli and cauliflower to make them softer. Then mix in the blender with water, and some plain yoghurt too, if you want. Add some sweetener (Splenda, or other). Actually taste pretty good :)
Drink as a sweet drink after dinner, in the evening, for breakfast/lunch/inbetween meals, or drink with dinner (along with the chicken/fish/steak, protein part of dinner, instead of having vegetables on the side).

If you use less water, so it's thicker, you can use it as purée along with your dinner.

Low-carb chocolate cupcakes


Want something sweet? Try these low-carb chocolate cupcakes!

Ingredients:
Almond-flour, 1 cup
Cocoa powder, 1 cup
Stevia or Splenda, 1 cup
Baking soda, 1 teaspoon
Butter, 1.75 oz (50 grams), melted
1 large egg
Sour cream, 2 spoons
Some water
Half a bar of 70-80% dark chocolate, chopped (optional)

Mix all the dry ingredients, then add egg, melted butter and sour cream. I would recommend to use Stevia sugar (no calories, no carbohydrates) instead of Splenda/artificial sweeteners, because it will probably make the muffins taste less artificially sweetened.
Add a little water to get the right consistency. Cut the dark chocolate in pieces and add to the mix.
Bake the cupcakes in the oven at 320-340 degrees Fahrenheit (160-170 Celcius) for about 15-18 minutes.

Plain yoghurt with sweetener and linseed (flaxseed)



If you don't feel like eggs for breakfast, this is a another option for a low-carb breakfast.

Ingredients:

Plain yoghurt
Sweetener (such as Splenda)
Linseed/flaxseed


Linseed are very healthy, too! Just read this:

"A mere table spoon of linseed is the health equivalent in lignans, vitamins, minerals and antioxidants of 30 cups of broccoli. Imagine eating 30 cups of vegetables every day!
You would need to consume 50 slices of whole wheat bread to get the fiber equivalent of that same tablespoon of linseed."

Chai latte



Want something sweet in the evening, or in the afternoon instead of coffee, that also fills you up a little more than regular tea? Try this chai latte, very good, just like you buy them at the coffee shop!

Chai tea (Indian chai, for example) (use 2 bags if you want it stronger, or brew with real chai tea)
Milk (whole milk is better, and on this LCHF diet, they say it's better with the milk with more fat)
Sweetener (Splenda, Natreen, or similar)

Berry smoothie!

Yummy! Sweet and good; as a dessert, drink between meals, or evening treat!

Ingredients

Frozen raspberries, blueberries, etc.
Splenda sweetening
Plain yoghurt, a few spoons
Sugarfree, but artificially sweetened berry/orange/lime lemonade, pour a little in there
Add some water if needed

Berries should be covered in liquid. Let it sit for a few minutes, so berries aren't so hard (since frozen).
Then blend with a mixer.


Mmmm... very good!
Sweet, but sugarfree!

Coconut Macaroons

Want something sweet of cookie substance?
These coconut macaroons are good, and very easy to make, and of course totally carb-free and sugar-free!
A sugar-free dessert with no carbs perfect when following the LCHF diet!

Ingredients:

Shredded coconut (2 cups)
1-2 eggs
Splenda sweetening
Some dashes of sour cream (or plain yoghurt)
A few tablespoons of melted butter
Some water (to get the right substance)
It makes about 5-6 macaroons with the amounts above.
Put them on baking paper and heat in the oven at 325 degrees Fahrenheit (170-180 degrees Celcius),
for about 10-15 minutes.
